28. Avocado Scrambled Eggs Ingredients: 2 avocados 8 eggs Milk Olive oil Salt and pepper Method 1. Beat 8 eggs, 1/2 cup milk, salt and pepper in a bowl 2. Put 3 tbsp light olive oil in a large non-stick frying pan 3. Heat on medium heat 4. Add the egg mixture and stir gently until starting to set 5. Stir through 2 thickly sliced avocados

Get you hands on something fast and healthy in the morning. Coming from a girl who gets up at 5:30 am every morning and barley has time to breath, its great to know you can still be healthy while living on the go!
